Mediterranean Inspired Quinoa Salad
This cajun inspired dish is bursting with bold flavors from Johno's Original Spice Blend, complemented by the savory goodness of shrimp and smoked sausage. it's quick to prepare and perfect for a weeknight dinner that feels like a comforting indulgence.
Ingredients:
1 lb Large Shrimp - peeled and deveined
1 lb Smoked Sausage, sliced into rounds
1 Bell Pepper, thinly sliced (any color)
1 Onion, thinly sliced
3 Cloves Garlic, minced
2 Tablespoons Olive Oil
2 Tablespoons Johno's Original Spice Blend
1 Teaspoon Paprika
1/2 Teaspoon Dry Thyme
1/2 Teaspoon Oregano
1/4 Teaspoon Cayenne Pepper
Cooked Rice or Crusty Bread for serving
Instructions:
In large skillet, heat olive oil over medium heat - add sliced sausage to the skilled and cook until. browned, about 3-4 minutes. Remove sausage from skillet and set aside.
Saute vegetables - in the same skillet, add sliced bell pepper and onion. Saute until softened and slightly caramelized - 5-7 minutes. Add minced garlic and saute 1-2 minutes until fragrant.
Cook Shrimp - push vegetables to the side of the skillet and add shrimp in a single layer. Season shrimp with Johno's Original Spice blend and other spices from ingredient list. Cook shrimp for 2-3 minutes per side or until pink. Return sausage to skillet and combine everything together.
Serve cajun shrimp and sausage skillet hot, straight from the skillet, with cooked rice or bread on the side.
