Mediterranean Inspired Quinoa Salad


This salad is not only vibrant and colorful but also bursting with robust flavors of Johno's Original Spice Blend! Try it for yourself for an indulgence that is still health conscious!


Ingredients:


  • 1 Cup Quinoa, Rinsed

  • 2 Cups of Vegetable Broth

  • 1 Cup Cherry Tomatoes, Halved

  • 1 Cucumber, Diced

  • 1/2 Cup Red Onion, Finely Chopped

  • 1/2 Cup Kalamata Olives, Sliced

  • 1/2 Cup Crumbled Feta Cheese

  • 1/4 Cup Parsley, Chopped

  • 1/4 Cup Fresh Mint, Chopped

  • 2 Tablespoons Olive Oil

  • Juice of 1 Lemon

  • 2 Teaspoons Johno's Original Spice Blend.


Instructions:


  1. In medium saucepan - bring broth to a boil. Add quinoa, reduce heat to low, cover-simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed. Fluff with a fork and let cool slightly.

  2. In large mixing bowl, combine quinoa, cherry tomatoes, cucumber, red onion, olives, feta cheese, parsley and mint.

  3. In small bowl whisk together olive oil, lemon juice and Johno's Original Spice Blend.

  4. Pour the dressing over the quinoa salad and toss gently to combine, ensuring all ingredients are evenly coated.

  5. Taste and adjust seasoning if needed. You can add more lemon or spice according to your preference.

  6. Chill the salad in the refrigerator for at least 30 minutes to allow flavors to melt together.

  7. Serve chilled or at room temp. Garnish with fresh herbs if desired.
